(Persia Digest) – Dizi, or abgousht, is a much-loved old grandma’s recipe for pot roast Iranian style. A tip for some traditional Persian dishes, such as ghormeh sabzi and abgousht, is that the longer they cook the better they taste.
Ingredients (serves 4)
½ Cup chick peas
½ Cup white beans
2 Cloves of garlic
2 tbsp tomato paste
Salt and pepper to taste

Place the beef, chick peas, beans, 1 onion, garlic, and tomatoes in a pan and cover with 6-8 cups of water. It is best to peel the tomatoes beforehand. Leave to cook slowly on low heat. About
2 ½ hours into the cooking time, wash the potatoes and add to the pot while removing and discarding the onion.
Remove the meat fat from the pot, pound well with the second onion and place back in the pot. When the meat and beans are cooked thoroughly, add the salt and pepper. Sauté the tomato paste in a little oil and add to the pot. Leave to simmer on low heat. When the dizi is ready, serve it in a bowl with pieces of small dry bread (like croutons). This can be served in two fashions. Firstly, it can be served with the meat, beans, and juices together; secondly, the meat and other ingredients in the pot can be separated from the juice and pounded together or mixed in a food processor until soft and served separately. The juice and bread pieces can be served like a soup.
