Ranginak - A old nutritious dessert recipe from Iran

(Persia Digest) – Ranginak is an old, delicious Iranian dessert. It is a rich and energizing nourishment as it is made with dates, walnuts, flour and butter. Ranginak is lovley served with tea and can be kept in the fridge for a long time.

Ingredients

2 cups Sifted flour

200-250g Butter

1 tsp Ground cinnamon

½ tsp Ground cardamom

Dates – to taste depending on the size

Walnuts to taste

Pistachio and coconut powder to garnish

Melt the butter in a pot on low heat. The amount of butter is optional.

Add the sifted flour to the butter and sauté on low heat until golden. Fill the peeled, seeded dates with walnuts. The amount of dates depends on the size of the dish. It has to cover the surface completely.

When the flour is golden, allow to rest for 3 minutes to cool down. Then, add the cinnamon and cardamom to the flour and mix well.

Place an amount of the flour mixture on a dish. Top the mixture with dates and continue layering with dates and the flour mixture until the dates are covered.

Now put the Ranginak in the fridge to set and garnish with coconut or pistachio powder before serving.
