(Persia Digest) -  Zereshkpolo Ba Morgh (Saffron rice with barberry and chicken) is one of the most favorite and most delicious Iranian foods mostly served on special occasions such as large parties, weddings or funerals.

Ingredients (serves 4)

4 Cups rice

4 Pieces of chicken

1 Onion

4 tbsp dissolved Saffron

1 tbsp rosewater

1 cup Barberry

2-3 tbsp Sugar

100g Slivered pistachios

50g Butter

Salt, turmeric, lime juice, tomato paste, rosewater to taste

Sauté the sliced onion, chicken, turmeric, and salt with two tablespoons of oil on medium heat for 15-20 minutes until the onions are caramelized. Then add about four glasses of water and boil until the water reduces to two glasses. Sauté the tomato paste for one minute in another hot pan with one tablespoon of oil to make a delicious sauce for the chicken. Then add the lime juice, rosewater, and one tablespoon of the saffron to the sauce and sauté for a few minutes. Add the sauce to the cooked chicken and stir to mix well. Reduce the heat to the lowest level and let the chicken simmer another 10 minutes to become well-cooked. Add one tablespoon of butter to another hot pan with barberries, sugar, one tablespoon of saffron and one tablespoon of rose water and sauté. Add one spatula of steamed saffron rice to the sautéd barberries and then add the slivered pistachio. To serve, transfer the remaining steamed rice onto a serving platter and garnish with the combination of steamed saffron rice, barberries and pistachios. Serve the chicken and sauce in another dish.
