(Persia Digest) - Guilan Province has always received the attention of both domestic and foreign tourists because of its huge variety of dishes; the traditional cuisine of this province has a global reputation.
Kal Kabab is a delicious, traditional dish of northern Iran, which is known as Rashti or Guilani Kal Kabab. This delicious dish, like the other famous north Iranian dishes, contains eggplants. This dish is served in a variety of ways. Some people also serve it as an appetizer.
Ingredients (serves 3)
4 Large eggplants
½ Cup sour pomegranate juice or verjuice or pomegranate seeds
2 tbsp mint and other herbs to taste
½ Garlic bulb
75g Crushed walnuts
Salt and pepper to taste
Give the eggplants a cut in the middle and grill on charcoal or in an oven (350 degrees centigrade). Rotate the eggplants to avoid burning them and so that they are cooked well.
Then you must peel the eggplants. To do this, if you put them in cold water, the peel can be easily removed.
If the eggplants have seeds, remove them. Then smash the eggplants with a cooking mallet. Smash the garlic cloves as well.
Chop the herbs thoroughly and then mix the eggplants, garlic, herbs, salt, pepper, pomegranate juice (or verjuice or pomegranate seeds) and the walnuts.
The Kal Kabab is ready.
It is best to place the dish in the fridge for a few hours to allow the flavors to blend together.
You can garnish the Kal Kabab with pomegranate seeds and some walnuts and enjoy it.
