(Persia Digest) – Ghanbar Polo is a rice dish for ceremonial gatherings cooked in Shiraz, Fars Province. This is served with a finely chopped Shirazi salad of cucumbers, tomatoes, and onions.
Ingredients (serves 4)
4 Cups rice
500g Minced meat
4 tbsp pomegranate paste
1 Large onion
50g Chickpea flour
Salt, pepper, turmeric, and oil to taste
Place the minced meat in a bowl and add the salt, pepper, turmeric, and chickpea flour. Knead until all the ingredients are well mixed. Make into small meatballs the size of a walnut and fry in oil. Put to one side. Garlic powder and other spices can be added to the meat.
Slice the onion and caramelize in the frying pan. Add the diced walnuts to the onions and sauté. Then add the pomegranate paste and salt and stir, allowing the juices to be absorbed. Add the washed, soaked, and drained raisins and stir.
Cook the rice as in boiled or steamed rice and layer with the meatball and other ingredients. Steam the rice mixture. Otherwise, you can cook the rice and layer it with the mixture as you are dishing it out.
