(Persia Digest) – Sardashi is a well-known home cooked meal from Hamedan in western Iran with many health benefits.

Today, the dish is cooked in an oven. But in the old days when ovens were not available, the dish was taken to a “sangak” flat bread bakery to be cooked in the baker’s oven (sangak is a popular flat whole bread in Iran cooked on a bed of pebbles in a large oven.) “Dash” in Azari means pebble, and so the dish has come to be known as sardahi.

Ingredients (serves 4)

700g Mutton

2 Medium onions

3 Raw potatoes

1 Bell pepper

3 Medium tomatoes

Sliced potatoes to cover the kebabs

Salt and spices to taste

Mince the meat, raw potatoes, and onions and knead well to stop from sticking. Roll out the mixture on a flat oven tray. Place a layer of sliced potatoes and tomatoes over the layer of meat kebab mixture and cook in a medium heat oven at 140 degrees centigrade for one to two hours until it is ready to eat.
