(Persia Digest) – Yatimcheh is a popular dish which is originally vegetarian. It is, however, prepared with different recipes across Iran. The aubergine yatimcheh is suitable for both vegetarians and dieters for its low calorie count. The following is the original recipe for this dish.
Ingredients (serves 4)
6 Large aubergines
6 Medium tomatoes
3 Medium onions
4 Cloves of garlic
½ Cup oil
1 tsp salt
1 tsp turmeric
Wash and peel the aubergines. Dice or slice and sprinkle with salt to extract the bitter juices. Wash the excess salt after 30 to 40 minutes.
Wash the onions and tomatoes and dice or slice. Peel and chop the garlic. Heat some oil or butter in a frying pan.
Sauté the onions for a few minutes. Take out of the pan when golden. Then fry the garlic and also remove from the pan when ready.
Fry the aubergines in the pan until golden. Then fry the tomatoes until the juices are absorbed.
All the ingredients must be fried separately due to their different cooking times.
Place all the ingredients in a pan with a little water, salt, pepper, and turmeric. Cover the pan and allow to simmer for half an hour. Serve on a dish and eat with bread, a variety of pickles, fresh herbs, whey, and sautéd dry mint. Bon Appetit!
