(Persia Digest) - Spear thistle stew is a traditional, delicious Iranian stew which is known as a seasonal stew. In addition to its great taste and aroma, spear thistle stew has many benefits for the body. The most important properties of the spear thistle include strengthening the heart, energizing, improving the appetite, improving the digestive system and helping food digestion.

Ingredients (serves 4):

50g Mint

600g Spear thistle

150g Parsley

2 Medium onions

2 Dried limes

Oil

400g Stew meat

1 tbsp Tomato paste

Salt, pepper and turmeric to taste

First chop and sauté the onions until they are soft and clear. Then add some turmeric. Dice the meat into stew sized pieces and add them to the pot.

Sauté the mixture of meat and onions well until the meat is completely fried. Next, add the tomato paste and stir.

Next, add a few glasses of boiling water to the pot and let the meat cook over a low heat. Then, after cleaning the spear thistle, rinse and drain in a colander and cut them into your preferred size.

Then chop the mint and parsley finely and fry them with the spear thistle in the same pan.

When the meat is half-cooked, add the mixture of fried spear thistle, mint and parsley to the stew pot. Make holes in the dried limes with a fork and place them in a glass of water.

Add the dried limes and some salt and black pepper to the stew an hour before the stew is ready and let it cook thoroughly over a very low heat.

When the oil in the stew rises to the surface and it is completely cooked, serve it with rice. Bon appetite!
