(Persia Digest) – Mashab is a traditional pottage from the pottage city of Qom which is easy to cook. Since Mashab contains a variety of vitamins and minerals, it helps refresh the skin and increase hair growth.

Ingredients (serves 5-6)

½ Cup black-eye beans

½ Cup rice

½ Cup wheat

½ Cup mung beans

1 Cup lentils

1 or 2 Chopped potatoes

1 Cup chopped pumpkin

200g Leg or neck of lamb

3 Medium onions

Turmeric, salt, pepper, sesame oil, water to taste.

Whey, sautéd dried mint, and caramelized onions for garnish

Soak the mung beans, lentils, and black-eye beans from the night before. Change the water and place in a large pan with the wheat and rice; add some water and allow to cook.

Slice the onions and sauté in sesame oil. Add the meat and fry with turmeric; add water and leave to cook.

Pull the lamb when it is soft.

Add the chopped pumpkin and potatoes to the beans with pepper, salt, and some meat stock and allow to simmer and cook gently.

Serve the pottage in bowls and add some cooked lamb to each one. Garnish with whey, sautéd dried mint, and caramelized onions.
