(Persia Digest) - Guilan Province in northern Iran has many local dishes. Torsheh-tareh is one of the vegetarian dishes of the province which needs few ingredients.
Torsheh-tareh is a dish without meat that is usually served with rice or fried fish.
Ingredients (serves 4):
2 tbsp Rice
500g Herbs (chives - parsley - spinach - some mint - blue eryngo - coriander)
4 Cloves of garlic
Salt, pepper, turmeric and verjuice or sour orange juice to taste
Crush and sauté the garlic with salt and turmeric and break the eggs into the sautéed garlic. Stir thoroughly and remove the pan from the heat.
Boil the rice with a glass of water and let it turn into mash. Add the finely chopped herbs to the mashed rice and add half a glass of water to the mixture of rice and herbs and cover the pot. Mix the flour with some cold water and stir until it is dissolved thoroughly. Then add the flour gradually to the stew and stir the stew constantly to prevent the flour to from lumps.
After a few minutes the herbs change color. You can add salt and pepper and sour orange juice to the stew at this point, bring to a simmer, add the mixture of eggs and garlic to it and stir well. Serve in a suitable bowl.
This delicious stew can be enjoyed with Kateh rice [boiled rice] and bread, or with salted or smoked fish with a variety of side dishes such as garlic and raw broad beans and daikon.
