(Persia Digest) - Eshkeneh is a traditional Iranian dishe that used to be popular in the past. This traditional dish not only tastes great, but also does not require many ingredients and can be easily cooked at home.
Ingredients (serves 4):
1 Large onion
2 tbsp Flour
1 tbsp Tomato paste
1 tbsp Dried fenugreek
Salt, black pepper, and turmeric to taste
First chop the onion into squares and sauté with oil in a pan.
Then, move the onions to one side of the pan and pour in a little more oil. Add the tomato paste and sauté until the oil turns completely red and the tomato paste does not smell raw. Mix with the onions and sauté again. Add a little turmeric, black pepper and salt to the onion and tomato paste and add the dried fenugreek as well and mix the ingredients.
Add the flour gradually and stir non-stop so that the flour does not form lumps.
Chop the potatoes into small cubes and add them to the ingredients. When the Eshkeneh sauce is smooth, add three glasses of water to the ingredients and bring to the boil.
Then, break the eggs into the pan and stir until they turn solid.
Pour the Eshkeneh into a dish of your choice and serve with bread.
