(Persia Digest) - Ab-doogh khiar is a light, healthy recipe for the summer which can be easily digested. This is a cold thirst-quenching dish which reduces the fatigue and lethargy caused by the summer heat.
Ingredients (serves 4)
2-3 tbsp chopped fresh herbes (mint, parsley, tarragon, savory, basil)
½ Cup fresh cream
10-12 Whole walnuts – diced
4-5 Small cucumbers – diced
2 Spring onions – diced
2 Cups water
Salt and pepper to taste
1 Cup raisins
4 Cups yoghurt
Diced stale flat bread
Mix the diced cucumbers with the yoghurt before adding the chopped herbes. Stir well.
Add the other ingredients one by one. It is best to add the spring onions just before serving to keep them from getting soggy. When all the ingredients are in, add two cups of water and continue to stir.
Keep the mixture for an hour outside the fridge to allow the flavors to mix and become more sour. If you prefer to serve it cold, you can keep it in the fridge for half an hour.
Add the bread before dishing up. It is best to use stale bread to prevent sogginess.
