(Persia Digest) - "Spinach nargesi" is a nutritious local dish from northern Iran. Due to the similarity of the colors of this dish (yellow, white and green) to the narcissus flower, it is called nargesi [Persian narges=narcissus].

First, wash and chop the spinach. Then put it in a suitable pot with half a glass of water and boil it. Note that after the spinach is fully cooked, there should be no water left in the pot.
Then dice the onions and fry them in a pan. After the onions are golden, add the spinach and fry. Note that the color of spinach should become shiny after frying.
Then mash the spinach in the pan and add some salt, pepper and the melted saffron.
Next, break the eggs on the spinach, but it is best to keep the eggs whole and unbroken.
When the nargesi is cooked, serve it on a dish. You can eat this delicious meal with bread and yogurt.
