(Persia Digest) – Adas polo (lentil rice) is a delicious and nutritious Iranian dish that you can cook with or without meat, just with dates or raisins.
It is rich in vitamins A, C, B1, B2, iron, potassium, magnesium, phosphate, and calcium, which play an important role in the growth and strengthening of children's muscles.
4 Cups rice
1 Cup lentils
200g Minced meat
1 Medium onion
Salt, black pepper, and turmeric
Soak the rice with some water, then fill a large saucepan with a few glasses of water and bring to the boil. Add the rice to the pot with some salt and let the rice boil for a few minutes. Then pour it into a sieve and set aside.
Cook the lentils with a few glasses of water. Then add some turmeric and black pepper.
After the lentils are fully cooked, mix them with the rice so that the mixture is completely uniform.
Heat some cooking oil in a pot; then arrange flatbread or sliced potatoes at the bottom of the pot to have crusty bread or potatoes while the rice is cooking.
Place the rice and lentil mixture into the pot, then pour half a glass of water along with 2 tablespoons of liquid oil over the rice and heat until it begins to steam; then lower the heat.
Chop the onion and sauté slightly in a pan. Then add the minced meat with some turmeric and black pepper and fry until it is well browned. Add the raisins and sauté slightly.
Mix some rice with the brewed saffron. Dish out the adas polo, garnish with saffron rice, the minced meat mixture and raisins and serve hot.
