(Persia Digest) – The provinces of northern Iran, by the Caspian Sea, are a very popular tourist attraction for the rest of the country. Iranians travel there for their holidays, to use the green spaces, the sea, and to savor the delicious gourmet dishes of the region. Local foods prepared in very special ways are an important part of this attraction. In this report, one of the most delicious dishes of this area will be introduced, called Mirza Ghasemi.
This dish is originally from the Guilan and Mazandaran provinces, but they are now very popular across the country. It is served in restaurants, or prepared at home, and served with rice or bread.
Ingredients (serves 4)
5 medium-sized aubergines
2 fresh tomatoes
1 clove of garlic (preferably fresh garlic from the north)
Dried thyme (optional)
Begin by barbecuing the unpeeled aubergines on an open fire or on the cooker (alternatively in an oven). Peel and chop finely.
Pour boiling water on the tomatoes and allow to rest for 10 minutes. Peel and chop finely. Chop the garlic and fry in oil in a frying pan until golden. Add the aubergines and tomatoes to the garlic and stir until the liquid is absorbed.
Add salt and pepper to taste. Gather all the ingredients to one side of the pan and use the other half to add and scramble the eggs until cooked. Blend the soft scrambled eggs into the aubergine mixture.
The mirza ghasemi is ready to serve. Bon Appétit!
