(Persia Digest) – Bozghormeh is a delicious homemade dish from Kerman, eastern Iran, which is also very nutritious because it contains meat and peas.
The people of Kerman serve this with both rice and bread.
This calcium-rich dish is also very good for growing children.
Ingredients (serves 6)
1 Cup peas
1 Kg onions
1 Head of garlic
500g Boneless meat
Dissolved saffron to taste
Whey, chopped walnuts to taste
Sautéd dried mint to taste
Salt, pepper, turmeric to taste

Dice the onions and caramelize. Put half to one side to garnish the dish. Add the garlic to the rest and sauté. Add the turmeric and pepper. Mix well and add the meat and fry until the juices are absorbed.
Soak the peas for a few hours beforehand and change the water a couple of times. Drain and boil with fresh water for ten minutes to prevent bloating.
Add the peas to the meat and onions and cover with water. Allow to simmer gently until well-cooked. Once ready, take off the heat and smash into a soft consistency.
Add the whey and saffron to the mixture and leave on the heat until all the flavors are fused. Lastly, add the salt.
Serve the dish and garnish with whey, caramelized onions, crushed walnuts, and sautéd dried mint (gently heat some oil in a small pan and add the dried mint; sauté lightly for a minute and remove from heat to avoid burning).
