(Persia Digest) – Sib polo is a local dish from the city of Kermanshah in western Iran; "sib" means potato in this dish. It is very simple to make and you can have it as a routine daily meal.
800g to 1 kg Chicken pieces
1 Chopped onion
3 Cups rice
2 Medium potatoes cubed
100g Fresh or dried dill
1/4 Teaspoon ground saffron
Salt, pepper, turmeric and cumin to taste
1/3 Cup raisins
First, rinse the rice and soak it. Marinate the chicken pieces with salt and ground black pepper.
Pour two cups of water in a pot, bring to the boil and then the chopped onion.
Then add the marinated chicken pieces. Add some turmeric to the water and let the chicken pieces cook.
Take the cooked chickens out of the water and fry them separately in oil.
Fry the cubed potatoes.
Pour four to five cups of water in a pot and put it over the heat. Add the butter to the water.
Add some turmeric and then the rice and cook the rice until the water is completely absorbed.
Then add the fried potatoes and chopped dill to the rice and mix; place the fried chicken pieces over the rice. Cover the pot. At the same time, brew the saffron and pour it on one side of the pot. Now, let the rice steam.
Sauté the raisins – which have been already soaked and drained – using a small amount of oil over gentle heat for about one minute.
When the rice is steamed, separate the saffrony part of the rice for garnishing. Decorate the dish with saffron rice and raisins and sprinkle some cumin over them. The Sib polo is ready to be served.
